Vegan Whipped Cream

Aquafaba looks like dirty bath water and smells like cat food. And yet this simple recipe turns it into delicious marshmallowy whipped cream!

Ingredients
  

  • 1/2 cup aquafaba liquid from one can of chickpeas
  • 1/4 cup icing sugar
  • 1/2 tsp vanilla extract
  • 1 pinch cream of tartar

Instructions
 

  • Add all ingredients to a bowl large enough to hold about 4 cups of liquid.
  • Use a handheld beater or standing mixer to whip the contents of the bowl until it looks like marshmallow, and holds stiff peaks - this usually takes 10 to 15 minutes. When you tilt the bowl on its side the contents shouldn't move.
  • Use wherever you would use whipped cream!
