Tofucado Grilled Sandwich

This delicious tofu & avocado sandwich is so quick and easy to make, yet incredibly yummy and healthy. One of the few recipes I've ever made where ALL the taste testers wanted seconds!
Reduce the avocado if you're monitoring your fat intake (for heart health or other reasons).

Equipment

  • Sandwich Press

Ingredients
  

  • 4 whole wheat bread slices

Filling Ingredients

  • 1 avocado
  • 140 g tofu firm
  • 2 Tbsp fresh basil
  • 1 Tbsp lemon or lime juice
  • 1 tsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper

Instructions
 

  • Preheat your sandwich press.
  • Add all filling ingredients to a bowl and use a fork to mash and mix everything until combined.
  • Evenly spread the filling on two bread slices, then add a bread slice on top of each to make two sandwiches.
  • Transfer the sandwiches to the sandwich press and grill until golden brown. Be careful to close the lid gently, otherwise all the filling might squish out!
  • Let the sandwiches cool down a bit before serving.
