
Creamy Caesar Dressing
This versatile nut-free dressing tastes just as good as the "real" thing (perhaps even better!), but has zero cholesterol and trans fat, and close to zero saturated fat. Drizzle it over everything - hell, use it as a pasta sauce if you're feeling adventurous!

Ingredients
- 2 pitted dates soaked for 10 mins in boiled water, water discarded
- 1/2 cup sunflower seeds
- 1 cup water
- 2 Tbsp lemon juice
- 2 tsp Dijon mustard
- 2 tsp capers
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
Instructions
- Add all dressing ingredients to a high-speed blender and blend until creamy and smooth.
Notes
Dressing will thicken slightly in the fridge.
If you don’t have a high-speed blender, quick soak the sunflower seeds in boiled water for 10 minutes and then drain before blending.
