Creamy Caesar Dressing

This versatile nut-free dressing tastes just as good as the "real" thing (perhaps even better!), but has zero cholesterol and trans fat, and close to zero saturated fat. Drizzle it over everything - hell, use it as a pasta sauce if you're feeling adventurous!

Ingredients
  

  • 2 pitted dates soaked for 10 mins in boiled water, water discarded
  • 1/2 cup sunflower seeds
  • 1 cup water
  • 2 Tbsp lemon juice
  • 2 tsp Dijon mustard
  • 2 tsp capers
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt

Instructions
 

  • Add all dressing ingredients to a high-speed blender and blend until creamy and smooth.

Notes

Dressing will thicken slightly in the fridge.
If you don’t have a high-speed blender, quick soak the sunflower seeds in boiled water for 10 minutes and then drain before blending.
